Kitchen hoods have different ways of dealing with cooking steam and fumes from the stove. You will find a range hood that simple extracts the air from the stove and then vents this air outside the home. You then find kitchen hoods that extract the cooking steam from the stove and clean it through a series of filters before this steam is then re-circulated back into the kitchen.
It's safest to just pull out whatever old system exists and install your modern appliance and range hood. You'll need to know where you want your new range to go in your kitchen. If you have ample space then you may want an island range in which case you'll need to consider the different island range hoods available. Getting a range hood with high cubic feet per minute (CFM) doesn't automatically guarantee better performance. It only means quicker venting but it doesn't always follow that it does better in terms of capturing and removing smoke. Also, it helps to be informed whether a hood has washable or replaceable filters.
If you cook top is against the kitchen wall and surrounded by kitchen cabinets, you will want to opt for a wall mounted range hood. These units fix directly to the wall, and above the cook top. If your stove has been installed into a center kitchen unit, then your best option is to buy an island range hood. These hoods are fixed to the ceiling and therefore require a beam within the ceiling to attach to. Whether you choose a wall mounted or island model, both can be bought as a vented or ventless unit.
